PELHAM, N.Y. – Pelham’s new Mexican restaurant, Cantina Lobos – slated to open this summer – has partnered with veteran chef Martha Topete Rubio as its executive chef.
Rubio, who was born in Mexico City, studied at the Ecole Hoteliere et de Tourisme Hosta in Lausanne, Switzerland, and has worked in large kitchens in Paris and Mexico City. She will start with Cantina Lobos immediately.
“We’re thrilled to have Martha on our Cantina Lobos team as executive chef,” said Clayton Bushong, one of three Pelham-based owners of the restaurant. “Her personal background, professional training and enthusiasm for Mexican cooking is a perfect match for our new restaurant. We can’t wait for the community to experience her culinary talent.”
“I’ve always wanted to follow my lifelong passion of being an executive chef and designing my own menu” said Rubio. “When the Cantina Lobos opportunity arrived it just seemed like a natural fit at the exact right time. I’m looking forward to creating dishes that will appeal to Mexican food aficionados, as well as those looking to share a delicious meal with families and friends accompanied by some tasty cocktails.”
Opening this summer, Cantina Lobos will be a neighborhood restaurant and bar featuring creative Mexican cuisine, utilizing locally sourced, sustainable ingredients. The bar will offer innovative cocktails, an extensive tequila menu and a well-curated beer and wine list. Lobos will serve lunch and dinner seven days a week.
Cantina Lobos is at 217 Wolfs Lane, Pelham.
